September 3rd National Welsh Rarebit Day

Welsh Rarebit is nothing more than a hot cheese sandwich which was supposedly named to make fun of the poor in Wales in the 16th and 17th Centuries, and maybe earlier. The funny thing about it is that in the world today it probably costs more to make than a lot of meat dishes. It is sort of like having fondue poured over toast and at least to me, it is really, really good. It use to be more popular and is a little hard to find today so I’m including this recipe in case you want to try it.
